Val Usal is a spiced, lightly tangy and slightly sweet coconut based field beans sprouts curry from the Maharashtrian cuisine.
Ingredients of Val UsalĀ
- 1/4 kg vaal, soaked, sprouted
- curry leaves
- 1 onion, cut
- 1 tomato, chopped
- 1 potato
- 1 small cup of wet paste of sauteed onion, fresh coconut, ginger, garlic
- 1/2 tsp mustard seeds
- 1/2 tsp jeera
- 1/2 tsp turmeric powder
- 1/2 tsp asafoetida
- 1 tsp red chilli powder
- 1 tsp goda masala
- 1 small piece of jaggery
- salt
- 1 tbsp oil
- 1 tsp dhania-jeera
- 1 tsp garam masala
How to Make Val UsalĀ
- Heat oil and put the mustard seeds, cumin, hing, haldi and curry leaves in cooker.
- Add the cut onion, when transparent then add the tomatoes.
- Mix in the potatoes, vaal, all the spice powders, jaggery, the wet ground paste, along with 1 1/2 cup water and salt in the cooker.
- After 1 whistle, switch off the gas.
- Serve hot with rice.
