Ingredients of Sweet Potato Chickpea Tots

  • 3 cups grated and chopped sweet potato
  • 2 flax seeds
  • 1/2 cup yeast
  • 2 tablespoons quinoa flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons hummus
  • 1/2 teaspoon Salt + pepper

How to Make Sweet Potato Chickpea Tots

    • Grate two large sweet potatoes.
    • Once grated, measure out three cups and give them a quick chop.
    • Add the sweet potato to a kadhai and steam for 5 minutes until tender.
    • Whisk together flaxseed meal and water and set aside.
    • Add the remaining ingredients, including the flax eggs, starting with just 1 tablespoon of hummus.
    • Stir together until it forms a dough.
    • Line a baking sheet with parchment paper and form the dough into small balls or tots.
    • Chill in the fridge for at least 30 minutes.
    • Bake for 25 minutes, flipping halfway through.
