Potato and pea curry is an easy-to-prepare, slightly hot sauce made from potatoes, tomatoes, peas, spices, and herbs. It can be prepared without onions or garlic.
Ingredients
- 2 medium potatoes boiled
- 4 tomatoes, finely chopped
- 2 cups peas
- 1 teaspoon cumin
- ¼ teaspoon red paprika powder
- ¼ teaspoon black pepper powder
- 1 cup water
- 1 tablespoon ghee
- 1-2 tablespoons coriander leaves chopped
- salt
Instructions:
- Heat the oil in a pan on low heat.
- Add the chopped onion and fry until golden brown.
- Add the chopped garlic and grated ginger and sauté for a minute.
- Add the tomato puree and cook until soft and doughy. Add cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, and salt to the pan and mix well.
- Add the frozen peas to the pan and cook for 2-2 minutes. Add the diced boiled potatoes to the pan and mix well with the remaining ingredients.
- Add 1 cup of water and bring the curry to a boil. Reduce heat, cover, and cook for 10-10 minutes. Serve hot with rice or bread and garnish with fresh coriander leaves.
