Falafel is one such dish made in the Middle East region which would go well for the Indian palate. Falafel is made with chick peas or chole along with herbs like coriander and parsley and spices like cumin and chilli powder. It can be served as starters or filled in with vegetables in a pita bread.

Ingredients For Falafel

  • Chick peas (chole) – 1 cup
  • Onion – 1 cup
  • Garlic – 5 to 6 cloves
  • Parsley – 1/4 cup
  • Coriander leaves – 1/4 cup
  • Cumin powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Salt to taste
  • Oil for frying

Directions

1Soak the chole overnight. Drain the water and mix with onion, garlic, parsley, coriander leaves, cumin powder, red chili powder, salt and grind coarsely in a food processor.

2Make small lemon sized balls with the mixture. Heat oil in a pan and deep fry the balls till golden brown and crisp from outside.

3Remove on a kitchen tissue to drain any excessive oil. Serve hot.
