The filling’s major component is grated broccoli. It improves the nutritious value of the paratha while giving the filling a distinctive flavour, texture, and vivid green colour. For a softer texture, the broccoli may also be cooked before grating. Grated paneer, an Indian cottage cheese, is combined with broccoli to give the dish a smooth, melt-in-your-mouth quality and boost its protein value.
Ingredients:
- 1 cup wheat flour
- 1/2 cup broccoli, grated
- 1/2 cup paneer (cottage cheese), grated
- 1 green chili chopped
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- Salt to taste
- Water, as required
- Ghee or oil for cooking
Instructions:
- In a mixing bowl, add the wheat flour, grated broccoli, grated paneer, green chili, cumin powder, coriander powder, turmeric powder, and salt. Mix well.
- Slowly add water to the mixture and knead it into a soft dough. Cover the dough and let it rest for 10-15 minutes.
- Divide the dough into equal-sized balls. Take one ball of dough and roll it out into a small circle.
- Heat a griddle or tawa on medium heat. Place the rolled-out dough on the heated griddle.
- Spread some ghee or oil on the surface of the paratha and cook it for 1-2 minutes until brown spots appear.
- Flip the paratha and cook the other side for 1-2 minutes. Repeat this process with the remaining dough balls.
