Black Bean and Sweet Potato Stew is a recipe idea using these ingredients.
- 1 tbsp olive oil
- 1 large sweet potato, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 red chili pepper, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp ground cumin
- Salt and pepper, to taste
- 2 cups vegetable broth
- Heat the olive oil in a large pot over medium heat.
- Add the diced sweet potato, and cook until slightly browned and softened, about 10 minutes.
- Add the black beans, diced tomatoes with their juices, chopped chili pepper, minced garlic, grated ginger, ground cumin, salt, and pepper. Stir to combine.
- Pour in the vegetable broth and bring to a simmer. Reduce the heat to low, cover the pot, and let simmer until the sweet potatoes are tender and the flavors have melded together, about 30 minutes.
- Serve the stew hot, with some crusty bread or rice on the side. Enjoy!
