Black Bean Sweet Potato Stew


Black Bean and Sweet Potato Stew is a recipe idea using these ingredients.


  • 1 tbsp olive oil
  • 1 large sweet potato, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 red chili pepper, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 2 cups vegetable broth


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced sweet potato, and cook until slightly browned and softened, about 10 minutes.
  3. Add the black beans, diced tomatoes with their juices, chopped chili pepper, minced garlic, grated ginger, ground cumin, salt, and pepper. Stir to combine.
  4. Pour in the vegetable broth and bring to a simmer. Reduce the heat to low, cover the pot, and let simmer until the sweet potatoes are tender and the flavors have melded together, about 30 minutes.
  5. Serve the stew hot, with some crusty bread or rice on the side. Enjoy!
