Green lentil dessert fudge

Lentils are a very fibrous, high protein food that meets most of our nutritional needs. This fudge recipe consists of fried green lentils with raisins, milk, cardamom and jaggery. Slow and fully cooked, served with a generous garnish of nuts.

Green lentil dessert fudge ingredients

  • 1 cup whole Moong beans, soaked for 4 hours

  • 4 tablespoons of cow’s ghee

  • 1 tablespoon of raisins

  • 400 ml whole milk

  • 1 cup of Jaggery (organic) or sugar

  • 1 teaspoon of crushed ground cardamom

  • 10 almonds (blanched or grated)

  • 2 sprigs of saffron (soak it in 1 teaspoon of water)

  • 30 g of khoya

Let us make green lentil dessert fudge

1.Drain and grind the soaked Moong beans in a food processor until a smooth paste forms.
2.Fry the dough over low heat in ghee until golden brown. When the ghee separated, add the raisins, milk, jaggery and cardamom and.
3.Take a saucepan and add khoya, soaked saffron and dal paste to it. Slowly cook the mixture over low heat; stir until all liquid is absorbed.
4. Transfer the prepared fudge to a greased dish and garnish with crushed walnuts. Serve it hot.
